An exquisite black tea that creates an iced tea better than the one you remember. Reflecting a deep, rich flavor but never crossing into astringency, this tea is an all-day sipper when the mercury rises.

CHEMEX STEEPING METHOD

  1. Thoroughly clean Chemex before making tea.
  2. Measure 50 grams (2 oz) of tea.
  3. Rinse an 8 cup Chemex filter.
  4. Place the filter in the Chemex and the tea in the filter.
  5. Pour 40 oz of water, just off a boil, over the tea.
  6. This process will produce approximately 32 oz of tea concentrate.
  7. Add enough cold water to the concentrate to make 1 gallon of finished iced tea.
  8. Store tea at room temperature for no more than 12 hours.

 

COLD STEEPING METHOD

  1. Determine the number of quarts of water being used to steep tea.
  2. For each quart of water use 15-20 grams (3-4 Tbsp) of tea.
  3. Add the tea and water to a lidded container.
  4. Refrigerate covered for at least 8 hours and no more than 14 hours.
  5. Strain tea from water and store in a separate container.
  6. Serve tea over ice.
  7. Store tea refrigerated for up to 3 days.
