An exquisite black tea that creates an iced tea better than the one you remember. Reflecting a deep, rich flavor but never crossing into astringency, this tea is an all-day sipper when the mercury rises.
CHEMEX STEEPING METHOD
- Thoroughly clean Chemex before making tea.
- Measure 50 grams (2 oz) of tea.
- Rinse an 8 cup Chemex filter.
- Place the filter in the Chemex and the tea in the filter.
- Pour 40 oz of water, just off a boil, over the tea.
- This process will produce approximately 32 oz of tea concentrate.
- Add enough cold water to the concentrate to make 1 gallon of finished iced tea.
- Store tea at room temperature for no more than 12 hours.
COLD STEEPING METHOD
- Determine the number of quarts of water being used to steep tea.
- For each quart of water use 15-20 grams (3-4 Tbsp) of tea.
- Add the tea and water to a lidded container.
- Refrigerate covered for at least 8 hours and no more than 14 hours.
- Strain tea from water and store in a separate container.
- Serve tea over ice.
- Store tea refrigerated for up to 3 days.
